The Cabernet Sauvignon and Petit Verdot grapes for this wine come from two different vineyards in the Paso Robles AVA. Whale Rock Vineyard, located in the Templeton Gap District, is the coolest microclimate within the Paso Robles AVA. The vineyard is gravelly clay loam with lots of limestone and ancient marine fossils, including whale bones. The vineyard is organically farmed, certified and also incorporates biodynamic practices.
Jack Knife Vineyard is on the east side of Paso Robles. The vines are planted on steep slopes in this high elevation (1300 feet) vineyard. The fruit on these windswept hillsides ripens early and shows savory dark red and blue berry fruit flavors. The soils are a sandy clay loam with gravel.
The grapes were harvested in late October. During fermentation the wine was punched down and pumped over once a day. The wine was aged in 40% new French oak for 20 months.
