PHILOSOPHY
The Fowles family is very committed to ethical and sustainable viticultural practices, as well as hunting and living off the 800 acre expanse they occupy in this remote region, Matt Fowles launched the Farm to Table range of wines to help promote this deep connection to the land.

VINEYARD
All of the fruit is sourced from Fowles estate vineyards in the super cool-climate Strathbogie Ranges of Central Victoria at an elevation of over 1600 feet.  The Cabernet Sauvignon fruit was picked from Upton Run Vineyard in early April.

Vintage Notes: 2019 was a hot, dry year which helped to produce Cabernet Sauvignon of exceptional concentration, but still with trademark cool climate perfume and aromatics. Grapes were picked earlier than previous years for this block to achieve a perfect balance of sugar, flavor and tannin.

CELLAR
The juice was fermented in stainless steel to encourage primary fruit flavors and aromas.  The wine was matured using old and new French oak. We blended in a small portion of Merlot (7%) from our Billi’s vineyard to contribute ripe, juicy red berry flavors and fill out the mid palate.
